weird or inconsistent menu options not working

hi!
I’m a new user to WordPress but I have a lot of IT experience. In this new role, I have been tasked to update the small company’s website with the Paeon theme.
I’ve been able to make small changes to various pages and just now added a new page (called Online Dispensary), linking it to a parent page (Clinic Services). However the new page does not appear in the menu!
I have also noticed that several other pages, while also linked to the same parent page, similarly do not appear on the “We offer” menu… Obviously this is frustrating as I’d like these pages showing and being able to be selected!
I’d also like to edit the home page wording, but the “Home” page appears blank when I edit it… not sure what I am missing here.
Please help!

Thank you for writing, I hope you are doing well.
The menus, by default may list the main pages, but if you want to create your menus and personalize them you should follow this tutorial explaining how menus in WordPress work:

The main thing I need help on is to add a new option (ie a link to a new page) into the menu structure in the “We offer” menu for some new services we are introducing.
Thanks for the link to the tutorial, but I don’t see the “Appearance” link on the left side in the menu to see or change the menu structure. I am stuck!

Thank you for the follow up.
The “Appearance > Menus” screen is the place where you’ll be able to create/edit/delete navigation menus. If you don’t get to see that menu, the most probable thing is that your user is not allowed to do so. So, I’d ask the site admin to give you permission to do so, by changing your user role.
Once you get that, you’ll be able to see the navigation menu editor and you’ll be able to solve the problem.
